2-3 Eggs
1 Onion (finely chopped)
1 Tomato (finely chopped)
2 Green Chillies (finely chopped)
1/4 tsp Turmeric Powder
1/2 tsp Red Chili Powder
1/4 tsp Garam Masala
Salt to taste
1 tsp Ginger-Garlic Paste
1/4 tsp Cumin Seeds
2 tsp Oil (or Ghee)
1/4 cup Coriander Leaves (chopped)

Method To Make Egg Bhurji
1. Heat Oil: Firstly, take a pan or tawa and heat oil in it. When the oil is hot, add cumin seeds and let it crackle.
2. Add Onion and Ginger-Garlic Paste: Now add finely chopped onion and fry it till it turns golden. Then add ginger-garlic paste and fry for a few seconds so that its raw taste goes away.
3. Add tomatoes and spices: When the onions turn light golden, add finely chopped tomatoes to it. Add tomatoes and mix it well and let it cook for 2-3 minutes. Then add turmeric powder, red chili powder and salt and mix well.
4. Add eggs: Now break the eggs and add them to the mixture and fry it while stirring it well with a spoon. Fry the eggs well, until they are fully cooked and light brown.
5. Add garam masala and coriander leaves: After cooking, add garam masala on top and mix well. Now garnish with green coriander and prepare hot egg bhurji.
