Ingredients Required to Make Suji Uttapam

Semolina (Rava/Semolina) – 1 cup

Curd – ½ cup

Water – about ½ cup (for consistency)

Salt – according to taste

ENO or baking soda – ½ tsp (for swelling)

You can use these vegetables to enhance the taste

Onion – 1 finely chopped

Tomato – 1 finely chopped

Capsicum – ½ finely chopped

Green chilli – 1 finely chopped

Coriander leaves – few (for garnishing)

Carrot – ½ (grated, optional)

Method to Make Instant Suji Uttapam

1. Prepare the batter – Add semolina and curd in a large vessel. Mix well. Now add water little by little and prepare a thick but smooth batter – enough to drop from a spoon, neither too thick nor too thin. Now add salt to it and keep the batter covered for 10 minutes until the semolina swells a little.

2. Prepare the topping - While the batter is being prepared, we will chop the vegetables and keep them in a bowl. There is no such fix, whatever vegetables you have available will work.

3. Add ENO to the batter - Now add ENO or baking soda to the batter and mix it very gently. You will see that the batter will start swelling and light bubbles will start appearing in it, then you should understand that our batter is ready to make Uttapam.

4. Make Uttapam - Take a non-stick tawa or frying pan and place it on the gas to heat it. Now see if the tawa is hot, then reduce the flame of the gas. Now add some oil and then pour a tablespoon of batter on the tawa. Spread it a little in a round shape - but be careful not to make it too thin. Now spread chopped onions, tomatoes, capsicum, carrots, green chillies and green coriander on top. Press it a little from above so that the vegetables stick.

5. Cook well - Now cover it and cook on medium flame for 2-3 minutes and then check if it has become light brown from the bottom, then flip it and cook for 1-2 minutes on the other side as well. Your hot uttapam is ready.
