Ingredients required for Cheese Fingers
Corn flour 1 cup
Sugar 1 teaspoon
Baking soda 1/2 teaspoon
Salt 1/2 teaspoon
Buttermilk - 1 cup
Egg - 1
Cheddar cheese (grated) 1/4 pound
Green onion finely chopped 1/4 cup
Pickled jalapenos (chopped) 1 to 2 tablespoons
Unsalted butter or Desi ghee 1/4 cup
Step-by-step process for making Cheese Fingers
1. First of all prepare the oven well. First heat the oven to 218°C. If you have a corn stick mold or any silicone mold, then heat it in the oven for 10 minutes so that it gives a good crisp.
2. Mix the dry ingredients. Mix corn flour, sugar, baking soda and salt well in a large mixing bowl.
3. Now mix buttermilk and egg in a separate bowl. Add this to the dry ingredients i.e. flour, sugar, soda and salt. Also add cheddar cheese, spring onions, jalapenos and half (2 tbsp) of the butter.
4. Prepare the Batter Mix everything well to form a smooth batter. No need to over mix, just combine everything well.
5. Pour into a bowl and take it out of the oven and brush or spoon the remaining butter into it. Then quickly fill the molds with the batter – about 3 tbsp in each.
6. Bake Place the molds in the oven and bake for 12-15 minutes until golden on top and soft on the inside.
7. Cool and remove Remove the cooked snack from the oven, cool for 3-5 minutes and then remove from the molds.
You can serve these crispy and cheesy fingers with tomato ketchup, mayonnaise or mustard sauce. It is best for kids to take to school in their tiffin and even adults can have it with tea.
